Zees Wine Bar & Grill’s Honey Baked Ham
Sweet & Savory Tradition
Celebrate Easter with a golden, glazed Honey Baked Ham, where sweet and savoury flavours blend beautifully. This recipe layers sweet honey and brown sugar with warm spices and a hint of cayenne, creating a glaze that caramelizes perfectly as the ham roasts.
Serve it as the centerpiece of your holiday table for a meal that feels festive, comforting, and unforgettable.

Ingredients for Ham
Serves 12 people
¾ cup Water, or as needed
2 whole Star anise
12 whole Cloves, or more to taste
1 (7 lb) Country-style ham
Ingredients for Glaze
½ cup Firmly packed light brown sugar
¼ cup Honey
2 tbsp Dijon mustard
2 tbsp Rice vinegar
1 ½ tsp Freshly ground black pepper
½ tsp Worcestershire sauce
1 pinch Cayenne pepper
Method
- Add water, star anise, and cloves to the bottom of a roasting pan. Place a roasting rack into the pan; place ham on the rack.
- Cut 1/4-inch-deep slashes, 1/2-inch apart, lengthwise and crosswise across the top of ham.
- Bake the ham in a pre-heated oven at 350°F for 20 minutes.
- While ham is baking, make the glaze by whisking together brown sugar, honey, mustard, vinegar, black pepper, Worcestershire sauce, and cayenne pepper in a medium bowl until thick and smooth.
- Brush glaze all over ham. Continue baking ham, brushing with glaze every 20 minutes, until glaze is a deep golden and the ham is heated through, about 2 hours &10 minutes.
- An instant-read thermometer inserted into the center of ham should read at least 145°F (63°C).
Wine Pairing – 2021 Cave Spring Pinot Noir ‘Dolomite’
The 2021 Cave Spring Pinot Noir ‘Dolomite’ is an ideal match for this honey baked ham. Medium‑bodied and expressive, the wine offers notes of dried cranberry and black raspberry compote alongside savoury hints of sage, clove, and cracked pepper. Those subtle spice and fruit notes echo the sweetness of the honey glaze and the warmth of the cloves, while the Pinot Noir’s bright acidity helps cut through the richness of the ham, creating a beautifully balanced pairing from first bite to last sip.
