Executive Chef Seth Labonte’s luxurious lobster salad is a simple yet elegant summer dish, featuring fingerling potatoes and fresh herbs. Pair it with a crisp Sauvignon Blanc to complement the lobster’s rich flavors.

Ingredients

Serves 2 people

Ingredients:

1 Medium size lobster

1 Medium size onion, diced

1 Medium size carrot, diced

1 Medium size celery stalk, diced

1 Bay leaf

1 sprig of Thyme

1 sprig of Parsley

1 sprig of Rosemary

1 tbsp Whole black peppercorn

2 cup White wine

4 L of Water

1 tbsp Mayonnaise

1 tsp Dijon mustard

1 tsp Capers and gherkins

1 Shallot, minced

1 Bag of fingerling potatoes, 5 lbs

1 Ring mold

Method

  1. Add vegetables, bay leaf, herbs, water and wine into a pot and bring to a low boil.
  2. Place the lobster into the boiling water and cook for 8 minutes while covered.
  3. Once cooked, remove and immediately place into ice water for 15 minutes.
  4. Once cooled, remove tail by twisting and pulling. Same with the claws up to were the shoulder meets the body.
  5. Remove meat and clean any shells that might be left over. Set aside.
  6. Cook potatoes until soil in salted water. Always cook potatoes in cold water. Once cooked set aside and cool.
  7. For the dressing combine mayonnaise, mustard, chopped capers, chopped gherkins and minced shallots. Season with salt and pepper. Set aside.
  8. Take potatoes and mash with a fork and add the dressing.
  9. Using your ring mold, add the dressed potatoes and push down creating a base for the lobster.
  10. Next add the lobster mix and again press down.
  11. Take any greens you might have and dress with some oil and vinegar or whatever you like.

Tip:

If you do not have time to purchase a whole lobster you can always buy the tails raw and poach them the exact same way.

For our wonderful lobster salad dish we are pairing the 2022 Creekside Estates Sauvignon Blanc. Creekside is among the most renowned producers of Sauvignon Blanc in Canada and it grows very will in our wine region. Sauvignon Blanc is a traditional seafood pairing and matches the intensity of this dish very well. The acidity in this sauvignon Blanc will cut through stronger aspects of the dish like the dijon to reveal a truly altered bouquet, with a very clean finish.
