HobNob’s Pumpkin Gnocchi

Ingredients
Serves 4 people
2 cups Pumpkin Purée
1/2 cup Parmesan Cheese, finely grated
1 Egg
1 tsp Salt
1/4 tsp Ground Nutmeg
3 cups All Purpose Flour
1/3 cup Salted Butter
1/4 cup Pine Nuts
12 fresh Sage Leaves
Method
- In a large bowl, combine the pumpkin purée, Parmesan, egg, salt, and nutmeg. Gradually stir in the flour until a soft, slightly sticky dough forms that pulls away from the sides of the bowl while remaining tender to the touch.
- Turn the dough onto a lightly floured work surface and, with floured hands, shape it into a log. Divide into four portions, then gently roll each portion into a rope. Using a sharp knife, cut each rope into bite-sized pieces.
- Bring a large pot of salted water to a gentle boil. Working in batches, cook the gnocchi until they float to the surface, then continue cooking briefly until tender. Remove with a slotted spoon and transfer to a serving platter.
- Meanwhile, melt the butter in a large skillet over medium heat. Add the pine nuts and cook until lightly toasted and the butter begins to turn golden brown. Stir in the sage leaves and cook just until fragrant.
- Spoon the browned butter mixture over the warm gnocchi and gently toss to coat before serving.
