Ingredients
Serves 8 people
20 Oreo cookies
5 tbsp Melted butter, unsalted
1 cup Bittersweet chocolate
1 cup Crispy rice cereal
1 cup Granulated sugar
1 tbsp Butter
4 oz Heavy 35% cream
Pinch coarse sea salt
Method
- For the caramel, add butter and sugar to a heavy bottom pan on medium high heat until sugar turns golden brown and bubbly. Do not stir or caramel will get grainy. Once desired colour, add cream and cook until a thick golden caramel.
- In a food processor, pulse Oreo cookies until fine crumbs form. Transfer to a medium bowl. Add melted butter and mix to combine.
- Pour Oreo mixture into a 9″ tart pan. Press into an even layer on bottom and up sides of pan.
- Pour caramel over crust and smooth in an even layer. Refrigerate until cold, about 15 minutes.
- Melt chocolate in a double boiler, stirring until smooth and melted. Add Crispy Rice Cereal and stir until well coated
- Pour chocolate mixture over caramel and smooth in an even layer. Sprinkle with sea salt. Refrigerate until chocolate is set, at least 2 hours or overnight.
