Sunshine Splash
Bring on the summer glow with a Sunshine Splash in hand. This bright and refreshing cocktail is made for patio lounging, poolside sipping, and lingering evenings under the sun. With its tropical flavours and bubbly finish, it’s the perfect way to toast to warm weather and carefree summer moments.

Ingredients
½ oz Grenadine
2 oz Orange Juice
1 oz Pineapple juice
1 oz Malibu rum
½ oz Bacardi rum
1 oz of Sparkling wine
1 Orange slice for garnish
1 Maraschino cherry for garnish
Method
- Add a layer of grenadine to the base of a Collins glass, then partially fill with ice and set aside.
- Fill a cocktail shaker with ice and add the fruit juices along with both rums.
- Shake well until chilled and evenly combined.
- Strain the mixture into the prepared Collins glass, allowing the grenadine to create a subtle layered effect.
- Top gently with sparkling wine. Garnish with an orange slice and a maraschino cherry, and serve immediately.
Tip
When shaking the ingredients, shake hard and until you feel the outside of the shaker become cold.
Hugo Spritz
Summer sipping starts with the Hugo Spritz. Light, floral, and refreshingly bubbly, it blends fresh mint, bright citrus, and sparkling wine into the ultimate warm‑weather cocktail. Perfect for sunny afternoons, patio hangs, and laid‑back evenings, it’s a sip that truly captures the feeling of summer.

Ingredients
Fresh mint leaves
1 oz Limoncello liqueur
½ oz St-Germaine elderflower liqueur
4 oz Niagara sparkling wine or Prosecco
2 – 3 oz Soda water
Lemon wheel for garnish
Method
- Lightly muddle fresh mint either gently in the base of a large red wine glass or pressed just along the inside of the glass to release its aroma without bruising.
- Add a lemon wheel and fill the glass generously with ice.
- Pour in the limoncello and elderflower liqueur, then top with Niagara sparkling wine or Prosecco.
- Finish with a splash of soda water and give a gentle stir to combine while preserving the bubbles.
- Garnish with additional mint if desired and serve immediately.
